Ingredients (Extract5 gal)

  • 1/16 lbs Chocolate Wheat Malt

    Chocolate Wheat Malt

    Intensifies aroma; improves color. For dark ales, alt, dark wheat, stout and porter.

  • 1/16 lbs Chocolate Rye Malt

    Chocolate Rye Malt

    Enhances aroma of dark ales and improves color. For dunkel rye wheat and ale.

  • 4 7/8 lbs Gold Dry; Northwestern

    Gold Dry; Northwestern

    Can be used in making Pilsner, Pale Ale, Dortmunder, Marzen and other Lagers.

  • 5/16 lbs Dark Brown Sugar

    Dark Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 5/8 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 5/16 lbs White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • 1.5 oz Fuggle - 5.5 AA% pellets; boiled 60 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1.5 oz Perle - 8.2 AA% pellets; boiled 30 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 1 oz Goldings - 5.0 AA% pellets; boiled 15 min

    Goldings

    Mild. Slightly flowery.

  • 1 oz Cascade - 13.0 AA% pellets; boiled 5 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Progress - 6.2 AA% pellets; boiled 1 min

    Progress

    Simular to Fuggles but a little sweeter.

  • Wyeast 1098 British Ale™

    Wyeast 1098 British Ale™

    From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.
