Cream Ale • All Grain • 5 gal

This recipe was inspired by Jeff Renner of Home Brew Digest fame. If you decide to brew this beer, I would recommend referencing the original recipes for his Classic American Pilsner/Classic American Cream Ale. They can be found at www.hbd.org, #3669 & 3670. His description of the cereal mash is an important part of the recipe and, while not overly complicated, is somewhat involved.

Ingredients (All Grain5 gal)

  • 7.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs Rice Raw

    Rice Raw

    Lightens flavor without taste. Use in American and Asian lagers.

  • 1 lbs Corn Grits

    Corn Grits

    Imparts a corn/grain taste. Use in American lagers.

  • .5 oz Cluster - 7.0 AA% pellets; boiled 60 min

    Cluster

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • .5 oz Liberty - 5.0 AA% pellets; boiled 15 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • .5 oz Styrian Goldings - 6.2 AA% pellets; boiled 10 min

    Styrian Goldings

    Mild, pleasant.

  • 1 tsp Irish moss - (omitted from calculations)

  • Wyeast 3766 Cider

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

2 step (145, 158) cereal double mash (45 minutes each rest, following Jeff Renner's cereal double mash schedule -- see www.hbd.org #3669, 3670) .5# stone ground yellow grits, .5# white quick grits, 1# Thai Jasmine rice Flavor hops actually first wort hopping (again, see jeff's post) Irish moss added last 15 minutes
