I've made this twice, and both times it has turned out great. A very well-balanced porter, right on target.

Ingredients (Extract5 gal)

  • 9/16 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 7/16 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 3/8 lbs American Black Patent

    American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • 5 13/16 lbs Pale Liquid; Alexanders

    Pale Liquid; Alexanders

    Reportedly lightest colored malt extract available.

  • 1/2 oz Centennial - 10.7 AA% whole; boiled 60 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1/2 oz Cascade - 7.0 AA% whole; boiled 20 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1/2 oz Cascade - 7.0 AA% whole; boiled 10 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Cascade - 7.0 AA% whole; boiled 5 min

  • White Labs WLP051 California Ale V

    White Labs WLP051 California Ale V

    From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.

brewed something similar over the weekend, was not able to get my hands on Centennial, so I went with Columbus. Some other minor changes based on what I already had on hand as well... can't wait to try it - thanks!
