Mash at 65oC to 66oC, you don't need to have a high mash temp to get the maltiness, let the malts show their character. The lower mash temp. gives a drier, less cloying finish.

  • 0.500 kg German 2-row Pils

  • 3.150 kg English 2-row Munich

    English 2-row Munich

    Used for extra flavour and colour in nitro-keg ales.

  • 0.350 kg German Dark Crystal

    German Dark Crystal

  • 0.200 kg English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • 1.500 kg German Vienna

    German Vienna

    Increases malty flavor, provides balance. Use in Vienna, Märzen and Oktoberfest.

  • 20 g Tettnanger - 5.6 AA% pellets; boiled 60 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 35 g Hallertauer Hersbrucker - 3.6 AA% pellets; boiled 40 min

    Mild to strong. 'Noble'.

  • 10 g Hallertauer Hersbrucker - 3.6 AA% pellets; boiled 7 min

  • Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Soft, smooth, coffee/chocolate and full of malt.

I have brewed this recipe with variations many time. It is one top three favourites. It has won and placed in state and national comps in Australia over more than 7 years (I mention this because I usually don't post recipes unless they have been independently evaluated). You can vary the pils, vienna and munich to your own taste. The hops should be german noble IMHO. I hope you try it or your version of it. Cheers.
