Ingredients (Extract4.5 gal)

  • .5 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • .5 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 7 lbs Amber; John Bull

    Amber; John Bull

    For ales and bitters.

  • 2 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 oz Northern Brewer - 7.7 AA% pellets; boiled 55 min

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • .5 oz Fuggle - 5.4 AA% pellets; boiled 15 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

    White Labs WLP028 Edinburgh Scottish Ale

    Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.

Notes

Brewed 3/9/02, bottled 3/30/02. After just two months conditioning this has proven to be delicious! This beer will most likely continue to improve in the next few months. I think this turned out A++! 9/28/02 Third place at Brewer's Dream Homebrew competition in chicago,IL! 10/16/02 First place at my local homebrew club meeting!
