It has begun

I brewed this recipe as it appears today. I forgot to take the O.G. reading. I used a quart starter. White labs says this yeast is sluggish in the first generation, but it was going hard and fast in the starter?

This beer has been in the secondary for a week now I plan to give it at least another month- if not two. I sampled it last night, the S.G. was 1.018

Kegging Keggin Over the Deep Blue Sea

I kegged the Dunkel tonight, not because it is or will be able to drink soon- I needed to create space. I suspect it MAY be ready to drink in another month? But that is only a SWAG. I noticed that it could be darker- maybe another .25 pound of Special B next time.

Very malty, but a little light in color and taste. It is an outstanding Oktoberfest though. I will redo this recipe using crystal malt and chocolate malt, the resultant recipe will not be as authentic, but oh well. I will forgo the partial mash. Will brew this recipe as an Oktoberfest next March.
