  • 12 1/2 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1.25 lbs English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • 1.5 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 1 lbs Crystal Malt 80°L

  • 2.3 oz Northern Brewer - 7.3 AA% whole; boiled 60 min

  • 1/2 oz East Kent Goldings - 6.3 AA% whole; boiled 15 min

    From traditional London brewery with great malt and hop profile. True top cropping strain, fruity, very light, soft balanced palate, finishes slightly sweet.

Notes

8/7/02: Lots of problems with a stuck fermentation on this one. OG was around 1.100, and is currently around 1.058. Added a fresh batch of 1098 yeast and some yeast nutrient on 6/7/02, and I'll se how it goes. I also made a small beer from the second runnings, using 1 ounce of the same bittering hops, and same for other hops. OG was 1.026 and finished at around 1.008, giving a very nice dry stout, a bit on the bitter side.
