Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.
Notes
The East Kent Goldings, Tettnang, and Cascade listed needed to be added with 10 minutes left in the boil. Then in the same quantity immediately after the wort is removed from boil. Then double the quantity of the same hops and dry hop.

I brewed this batch May 27,2002. The O.G. was 1.055. I'll keep you posted.
Dry hopping

Today I racked the beer into the secondary. I dry hopped with one ounce each of East Kent Goldings, Tettnang, and Cascade. The S.G. was 1.011
Kegged

I kegged the beer earlier this week. Tastes similar to Liberty Ale by Anchor, but is not as bitter.
Improvements

Next time I'll substitute the Cascade for another hop; although I'm not sure, but probably something noble. I might ease off on the bitterness just a hair, maybe 1/4 oz. less on the bittering Fuggle?

I changed the recipe a tad. I switched the American victory with Belgian Biscuit. Although they are pretty much the same, I don't have to mash the grains anymore. I think the Belgian Biscuit has a better flavor too.
