Ingredients (All Grain17 L)

  • 3.1 kg German 2-row Pils

  • 0.06 kg Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • 0.07 kg Crystal Malt 10°L

    Crystal Malt 10°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

    For traditional Alt Biers, a strong fermenter which leaves a smooth, attenuated, yet mild flavor. Use in your favorite German Ale recipes. Also makes a slightly dry but clean, quenching wheat beer.

Notes

1 hours at 50 degrees C, then boiling small portions of mash (5-10%) and adding back until temp 63 C. Left there for an hour, and then continued boiling until temp at 74 C. 2 weeks fermentation, and then I had to keg it and serve the next day, with extra CO2 from the bottle. Would be better to let it mature a bit more. Still, a very light refreshing ale, with lots of Cascade taste.
