Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Mash at 155 degrees for 90 minutes. Boil for 90 minutes. Hop schedule is as follows(all hops are Crystal hops @4.1 aa%). Start of boil - 3.5 oz, 60 min. - 1.5 oz, 30 min. - 2 oz and at 1 min. - 11 oz.

left out the sucrose, used 12 oz total hops, split a 10 gal batch using wyeast thames valley and american 2. i have brewed this twice, once with crystal hops and the second time with all willamette. both times turned out superb, malty, perfect hop balance and nice wheat aftertaste.
