Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.
Notes
Mash in at 122° fo 30 minutes. Raise to 151° for 35 minutes. Increase temp. to 156° and test for conversion after 30 minutes. Mash out at 165° and sparge with 170° water to collect 7 gallons. Ferment at 49° for 7-10 days. Raise to 58° for a 2 day diacetyl rest. Rack to secondary and lager at <39° for 1 month. Bottle and cold condition for 1 month.
