Azorean Brewer

This is a delicious English Porter. This recipe has been fine tuned for more traditional porter standards.

Ingredients (All Grain5 gal)

  • 10 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs American Caramel 120°L

    American Caramel 120°L

    Provides color, a unique flavor, body, and contribures to foam retention and beer stability. Gives a pronounced to sharp caramel flavor and a deep red color.

  • 1/2 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 1/4 lbs American Black Patent

    American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • 3/4 oz Target - 10.0 AA% pellets; boiled 90 min

    Target

    Used for its robust bittering ability in British ales and lagers. Aroma is quite intense.

  • 1/2 oz Fuggle - 4.8 AA% pellets; boiled 15 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1/2 oz Willamette - 5.0 AA% pellets; boiled 15 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • 4 oz French Roast Ground Coffee final 5 min.(optional) - (omitted from calculations)

  • Wyeast 1098 British Ale™

    Wyeast 1098 British Ale™

    From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.

Notes

You will win the hearts of your dark beer drinkers with this one. Enjoy it. use only 1/2 cup of French Roast coffee in the final 5 min. of boil. Wonderful results. OK, My wife and I went to the South End Brewery in Charlotte NC and she ordered a "Mocha Porter", it was delicious. This is a representation of that beer. I find that if you grind the coffee just prior to use is best, add 1/2 cup to the last 5 min. of boil. The dark beer drinkers I know have come to love this porter as a an excellent example of the style of beer. Enjoy it. Another recipe brought to you by the "Azorean Brewer".

Really great Porter

This turned out to be a really great Porter. But ya know what because Coffee is not a normal ingredient for me, I had a couple of ales and completely forgot the coffee LOL ... guess I will have to try this again ... oh well ...

Getting even better

OK, it's been bottled for 20 days (3 weeks) and it really is turning out to be a very tasty Porter. There is enough hops to blend all the delicious flavors together along with the Chocolate and Black Patent Malts. The lingering flavor of the Crystal makes you want to lick the empty glass. I highly recomend this as a traditional Porter.

It's now in the fermenter, perking away. My OG was 1054 and so far looks and smells good. I am a BIG fan of Cascade dry hopping, but in a porter? If you are there, Azorean, let me know if it works. OBTW I did NOT forget the coffee :-)

I modified this a little bit for a friend, making it about a 4 pound mini-mash and omitting the dry hopping. I assited him in the bottling yesterday and it was spectacular. Big round and smooth. I can't wait to try it cold and carbonated. Kudos to you Azorean.

Man this stuff is the bomb!! I brewed it and everyone thought it was fantastic. It comes across in layers. first coffee, then hops, and finishes off with a nice chocolate ummmmm. definitey on my to brew again list. Eric
