Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

I brewed this on Sunday, and it's bubbling away like Jacques Cousteau at 3000 feet and it smells like hop soup! Num!
Racked to Secondary

I racked this to secondary on Sunday. Gravity was 1020 after a week. It tasted big and hoppy! I added 1 oz pellet Cascade to dry-hop.

This was very clear and super hoppy - TONS of Cascade grapefruit aroma/flavor when it was bottled.

This beer has a GREAT white, foamy head and a clear, amber color. Wierdly, the hops have mellowed out a LOT. Might be a result of using home grown Cascades. I would classify it as an AMERICAN pale ale now - not an IPA. Next time, use pellet or store-bought whole Cascades.

Brewed this one again, skipped the hop-tea step this time and pitched Columbus (13% - store was out of Centennial) for bittering. Also bumped the gravity to 1070.

Racked to secondary. Looks dark golden, clear. Tastes malty and hoppy. Added Cascades to secondary.
NITRO II - Bottled 10/16/02

Added 2/3 c. corn sugar for priming to entire batch. Bottled 9 bottles for competition, kegged the rest for the Cam Waters house concert on Nov. 9, 2002. FG 1013. Hoppy aroma and citrusy hop flavor, bitterness consistent with an IPA. Good malt flavor in spite of low FG. VERY clear, amber colored.
