Ingredients (All Grain5 gal)

  • 15 lbs Belgian Pale

    Fully modified and is easily converted.

  • 1 lbs German Dark Crystal

  • 1/4 lbs Belgian Biscuit

    Belgian Biscuit

    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

  • 1/4 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 2 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 oz Brewers Gold - 9.0 AA% pellets; boiled 60 min

  • 1/2 oz Styrian Goldings - 6.0 AA% pellets; boiled 12 min

  • White Labs WLP545 Belgian Strong Ale

    White Labs WLP545 Belgian Strong Ale

    From the Ardennes region of Belgium, this classic yeast strain produces moderate levels of ester and spicy phenolic character. Typically results in a dry, but balanced finish. This yeast is well suited for Belgian dark strongs, Abbey Ales, and seasonal beers.

Notes

This is a clone of La Trappe Quadrupel with a little twist. It has higher alcohol content and a mix of american and french oak chips. Curacao and coriander are added with the hops for the final 12 and 3 minutes of the boil. 1 tsp Irish moss is added for the final 15 minutes. 4oz of oak wood chips at added to the 2ndary fermentor.
