  • 2 lbs Maris Otter; Crisp

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1.25 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 0.75 lbs British Black Patent

    British Black Patent

    Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • 0.5 lbs Victory® Malt; Briess

    Victory® Malt; Briess

    Biscuity, baking bread, nutty flavors.   • 0.66 lbs Cara-Pils® Malt; Briess

  • 1 oz Liberty - 4.6 AA% whole; boiled 15 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • 4 oz Chocolate (bittersweet bakers) - (omitted from calculations)

    Chocolate (bittersweet bakers)

    Chocolate liquor to which sweeteners and cocoa butter have been added. Also known as dark chocolate. According to government standards, it must contain at least 35 percent chocolate liquor. Its fat content averages 27 percent. Tastes rich and smooth. Strongest chocolate flavor with minimal dairy or milk flavor. Flavor depends on cocoa bean blend rather than dairy ingredients.

Notes

Steep grains at 151 degrees for an hour. Sparge with a gallon of water at 170 degrees. Made a yeast starter the night before brewing. Added DME at 30 min. Added LME at 15 min. Pitched yeast at 70 degrees and fermenting in basement at 68 degrees. OG 1.093. FG 1.022. ABV 9.4%.
