This was my first attempt at home brewing. Wanted to go with a low bitterness recipe in the hopes my wife would like it too as she doesn't care for the really bitter ones. It turned out quite well despite the expected first time adventures. I think I'd use pale malt extract next time to bring out more of the red color from the toasted grain though.

Ingredients (Extract5 gal)

  • 0.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 0.5 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 6.0 lbs Liquid Amber Extract

    Liquid Amber Extract

    Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 1 oz Northern Brewer - 6.4 AA% pellets; boiled 30 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1 oz Fuggle - 5.0 AA% pellets; boiled 5 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1 oz Irish Moss - (omitted from calculations)

  • Wyeast 3766 Cider

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Notes

The 2-row should be roasted at 350F for 10-15 minutes before steeping. This adds a good bit of the red color, though with the amber malt it was hard to see.
