Sour mash

1 lb of the crushed grain was mashed in a temp controlled crock pot at 153 for 3 hours. Then cooled to 118. The grain was not removed. 1 cup of plain zero fat Greek yogurt added to the crock pot for 2 more days.

Brew day

The remaining 9 lbs of grain were added to 6.5 gallons water. The water was slowing fired over 2 hours to get to 170F. The grain was removed. 1/2oz of hops added to the mash. After the mash is completed 1 ounce of salt, and 1 oz crushed coriander seed added. Also the liquor from the sour mash. Bring this to a boil and only boil 5 mins. Cool and ferment at 58F.

Bottling/tequila

3 months before. 2 oz oak chips were soaked with the zest of 6 limes in 1 cup silver tequila. The strained tequila is added to the Gose at bottling along with 5oz priming sugar.
