Use Polaris Hops (German) instead of the Waiema. Water treated with calcium chloride as well as Gyspsum, small amount of magnesium sulphate. In 40litres of liquor: 4g Gypsum, 15g Calcium Chloride, 2g Magnesium Sulphate and 1g salt.
