Ingredients (All Grain45 L)

  • 9 kg Pale Ale; Crisp

    A principal ingredient of cask ales using heritage barleys.

  • 2 kg German Light Munich

    German Light Munich

    For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

  • 1 kg White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • 150 g Strisselspalter - 2.4 AA% whole; boiled 60 min

    French variety related to Hallertauer.

  • 50 g Strisselspalter - 2.4 AA% whole; boiled 10 min

  • Wyeast 3725-PC Bier de Garde

    Wyeast 3725-PC Bier de Garde

    Low to moderate ester production with subtle spiciness. Malty and full on the palate with initial sweetness. Finishes dry and slightly tart. Ferments well with no sluggishness.

Notes

Caramelise the first runnings (10 litres) by direct flame in metal pot until a thick syrup. Add to main boil.
