This yeast is one of the most widely used lager yeasts in the world. Very malty and clean, great for all German lagers, pilsner, oktoberfest, and marzen.
Notes
Mash Vienna and Cara-Pils in 1 gallon water at 152F for 60 min or until converted. Top off to 2.5 gallons and bring to a boil. Remove from heat and add DME. Follow 60 minute hop schedule. Add LME during the last 15 minutes of the boil. Pitched with 1/2 gallon starter that was on a stir plate for 3 days at 62F. Fermentation started within 2 hrs. Lower temp to 55F and hold for 7 days. D-rest for 3 days. Slowly lower back to 55F for a couple days then transfer and lager for 30 days or more if you can keep your mind off of it. Beautiful beer for the icy winter ahead. Cheers!

This turned out to be a great Helles, but I prefer my HAMMS Munich Helles clone. Temperature control is very important when fermenting lagers. I think I had too big of a swing during aging and it didn't turn out as clean as I was expecting. I would brew this beer again but would increase my D-rest to ensure DMS elimination and will wait until I am finished with my fermentation keezer is complete.
