River Birch
Saison • All Grain • 5 gal
Attenuation was ridiculous on this one. Resulting brew is very dry and spicy, but with a very fruity note. All of the saison traits are there.

Wyeast 3711 French Saison
Wyeast 3711 French Saison
A very versatile strain that produces Saison or farmhouse style beers as well as other Belgian style beers that are highly aromatic (estery), peppery, spicy and citrusy. This strain enhances the use of spices and aroma hops, and is extremely attenuative but leaves an unexpected silky and rich mouthfeel. This strain can also be used to re-start stuck fermentations or in high gravity beers.

Very nice with first few tastings. Dry and crisp, but exceptionally fruity. Odor is straight up Riesling wine with a touch of lemon. Slightly reminiscent of sorachi ace flavorings. Nice spicy, pepper notes on the back-end with textbook classic Belgian saison traits.

Best beer in basement currently. Amazingly, the fruity hop notes are still big enough to really impress people - although they have gained a more grapefruit tone as time marches on - less mango. The yeast have overcarbonated this guy a bit and I have had a gentle gusher or two. Head is ridiculous; it lasts some 20 minutes.
