  • 1 lbs American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • .5 lbs 2-Row Caramel Malt 60L; Briess

    Sweet, Pronounced Caramel. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 60L is a roasted caramel malt that imparts deep golden to red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to amber and red beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

    Nutty rich, savory flavor. Walnuts are the fruit of a large deciduous tree belonging to the family Juglandaceae . Of the 60 varieties about 20 are edible. They are unique amongst nuts because most of the fat in walnuts is polyunsaturated which are said to lower cholesterol.

    This yeast produces a beer that is malty, but well-balanced. Expect flavors that are toasty with malt-driven esters. Highly flocculent and good choice for English pale ales, English brown ales, and mild ales.

Notes

Include 1 lb roasted, chopped pecans in the mash (steep). Roast 3 times to remove oils. 1st roast single layer @ 300 deg 10 mins. Cool and chop/crush and let stand in paper bag overnight. 2nd roast 10 mins at 400, don't scorch. Overnight in bag with paper towels. Final roast is 8 mins at 350 then add to grain bag. Mash grains for 90 mins in 2 gals water at 158-160 deg, rinse with 1 gal 170 deg. Add DME and boil as usual.

Very nice all around ale

Not too sweet, not too hoppy, crisp dry finish. Excellent with pub food. Even my friends who don't like dark beers like this one. Should age at least a month and gets even better at 8 weeks.

Nuts in yo mash

Hey big-b, This is an interesting recipe, I love nut brown ales and have thought of trying nuts in the mash or boil before, but I've always heard that the oils will kill your head retention. So I have to ask if this 3-step roast on the pecans is designed to help with that or just for a more pronounced flavor?
