  • 8 lbs 2-Row Brewers Malt (Organic); Briess

    Mild malty flavor. USDA Organic, 100% Organic. Characteristics & Applications: • Base malt for all beer styles • Smoother, less grainy flavor than 6-Row Brewers Malt. • Slightly higher yield than 6-Row Brewers Malt. • Slight lower protein than 6-Row Brewers Malt. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

  • 2 lbs Canadian Craft Brewers Pale Malt; Beeston

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 3 oz Apollo - 19.5 AA% whole; boiled 60 min

    Apollo

    This super high alpha variety was developed by the Hopsteiner Breeding Program and released in 2006. It is resistant to powdery and downy mildew. The very high alpha, good storage stability and low cohumulone ratio makes it an excellent choice for bittering. Added late into the boil it provides a strong grapefruit and hoppy note.—usahops.org

    Horizon

    Pedigree A diploid high alpha, low co-humulone selection. Cross made in Oregon in 1970, half-sister of Nugget. Typical Beer Styles All Ales and Lagers.

  • 5 oz Centennial - 10.0 AA% whole; boiled 2 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 oz Spruce (essence) - Spruce Tips (fresh) (omitted from calculations)

    Spruce Essence adds to the foam of beer and will not impair the color. Typical use: 1 teaspoon per gallon.

  • 2 tsp Lemon peel (fresh) - Grapefruit Zest (omitted from calculations)

Brewed on National HomeBrew Day May 4th, 2014. Water originated from an un-named waterfall in the NW corner of the Mt Hood National Forest. Harvested 50' below the snow line on May 3rd 2014. 100% snowmelt. 60 min 2 oz Apollo Hops 19.5% 48 min 1 oz Apollo Hops 19.5% 39 min 1 oz Horizon Hops 14.5% 33 min 1 oz Horizon Hops 14.5% 28 min 2 oz Newport Hops 16.3% 22 min 1 oz Newport Hops 16.3% 17 min 1 oz Simcoe 15.4% 15 min 1 Whirlfloc Tablet 12 min 1 oz Simcoe 15.4% 10 min Wyeast Nutrient 10 min 1 Lb Golden Brown Sugar 8 min 1 oz Centennial Hops 10.5% 4 min 2 tbs Organic Sundance Pink Grapefruit Zest 4 min 1 pint glass Spruce Tips 3 min 1 oz Centennial Hops 10.5% 2 min 1 oz Centennial Hops 10.5% 1 min 1 oz Centennial Hops 10.5% Flame out/lid on 1 oz Centennial Hops 10.5% Dry hopped with 2 oz Mosaic Hops on June 21st. 1.036 OG for grains only 1.046 OG at end of boil 1.078 OG with corn sugar 1.002 FG way lower than expected. 5/4/14 Brew date, 6 gal 5/11/14 6 lbs of corn sugar and 1 gal of boiled water added 6/7/14 Racked into secondary, very light in color and quite cloudy, looks like a white wheat beer. Almost like snow. 7/11/14 Bottled into 24oz bottles with carbing Sugar drops. 2 per bottle
