  • 18.5 lbs Golden Promise Pale

    Golden Promise Pale

    An especially sweet and clean variety of barley which results in full and malty sweet beer. It has superb hush integrity and delivers fast and consistent mash tun drainage. This malt variety is perfect for brewing up a clear, bright pint.

  • .33 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • .33 lbs Peat Smoked Malt

    Peat Smoked Malt

    Imparts a robust smokey flavor and aroma. Use in Scottish ales and Wee Heavies.

  • .33 lbs De-Bittered Black Malt (Mout Roost 1400); Dingemans

  • 1 oz East Kent Goldings - 5.0 AA% pellets; boiled 45 min

Notes

Mash 90 minutes at 154F. Mash Out at 168F. Pull 1.5 gallons of first wort and boil vigorously down to 1 pint then add back to main boil when it has ~90minutes left (~6.5gallon volume). Main boil is 2-2.5 hours. Technique & original Traquair recipe from Skotrat @ AHA
