  • 18 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1.5 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • 1 oz Northern Brewer - 8.0 AA% pellets; boiled 60 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1.5 oz Saaz - 5.0 AA% pellets; boiled 15 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 2 oz Tettnanger - 4.5 AA% whole; boiled 1 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • White Labs WLP920 Old Bavarian Lager

    White Labs WLP920 Old Bavarian Lager

    From Southern Germany, this yeast finishes malty with a slight ester profile. Use in beers such as Oktoberfest, Bock, and Dark Lagers.

Notes

Begin w/ 5 gal of water @ 132F strike heat Mash in and rest for 30 min @ 122F Add 212F water to bring to 150F for ten minutes, then 158F for twenty minutes. Perform Iodine check. Mash out by resting for ten minutes @ 165F. Add hops as scheduled, except Tettnanger; After boil is complete, draw 2 qts of hot wort into a pot or bowl, add tettnanger to bowl, cool, then add to fermentor (dry hop).
