  • 13.25 lbs Pilsen 2RS Malt; Castle Malting

    Pilsen 2RS Malt; Castle Malting

    Features: The lightest coloured Belgian malt. Produced from the finest European two-row spring barley varieties: Henley, Tipple, Sebastian, Prestige, Thorgall. Kilned at up to 80- 85°C. Usage: All beer types. Can be used up to 100% or as part of the mixture. Characteristics: The lightest in colour and low in protein, this malt is well modified and can be easily mashed with a single-temperature infusion. Our Pilsen malt carries a strong, sweet malt flavour and contains enough enzymatic power to be used as base malt.

  • .5 oz Brewers Gold - 10.0 AA% pellets; boiled 45 min

    Classic farmhouse ale yeast. Spicy and complex aromatics including bubble gum. Very tart and dry on palate with mild fruit. Finishes crisp and mildly acidic.

Notes

Wyeast 3711 French Saison To maximize fermentables use a step infusion mash. Start with 3.5 Gallons water 1) Mash in at 113 for 45 minutes 2) Raise to 131 for 15 minutes 3) Raise to 144 for 30 Minutes 4) Raise to 154 for 15 Mintues 6) Raise to 165 Sparge with 5 gallon of water to collect 7.5 total gallons In order to get a golden color, I am going to do an extra long boil. 3 hours. Boiled down to 4 gallons at 1.082, added 1 gallon cold for gravity of 1.067 Made a 1 qt starter 12 hours before with 1 cup dme.

Gravity 1.046. Lots of pepper spice. Surrounded with 80 degree water to kickstand yeast
