  • 9 lbs American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs American Caramel 40°L

    American Caramel 40°L

    Provides color, a unique flavor, body, and contributes to foam retention and beer stability.

  • 1/2 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • .25 lbs Midwest Wheat Malt

    Midwest Wheat Malt

    Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

  • 3/4 oz Chinook - 10.0 AA% pellets; boiled 60 min

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 1/2 oz Cascade - 5.0 AA% pellets; boiled 20 min

Notes

This is what a true steam beer should be like. Step mash, 122F for 20 minutes then 150-152F for 60 mins. Sparge with 170f. Dry hop 1 oz. Cascades in secondary. Serve this one cold. You will keep going back to the fridge for more. Note: As alpha acid content of hops varry from harvest to harvest adjust your bittering hop amount to bring you to 45 IBU total brew pot calculations. I originally made this recipe with 1/2 oz of Chinook @ 13 AA untis but my last purchse of Chinook was 10.7 AA units. Good luck this one is a keeper.

Hop Head's Dream

This turned out to be great. I used to brew this all the time via Extract brewing, now that I have switched to all grain it's even better. O.G. was 1.052 S.G. was 1.014. Chinook gives it the nose you deserve, and Cascades balance it out nicey, this is a great Steam beer, I highly recommend it. My only complaint is I only have 1 six pack left, guess I had better start mashing :-)

Next time I brew this I am going to use 5 lbs. American pale, and 4 lbs American Munich with no Chocolate, I'll post the results and if it works better, I'll add a "#2" recipe.
