Ingredients (All Grain11 gal)

  • 20 lbs Pale Ale Malt; Briess

    Pale Ale Malt; Briess

Golden color with a malty flavor. Characteristics & Applications: • Can be used as a base malt. • More pronounced malty flavor than 2-Row Brewers Malt. • Use with 2-Row Brewers Malt for rich malt flavor and additional color. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

  • 3.75 lbs Munich 10L Malt; Briess

    Munich 10L Malt; Briess

Robust malty flavor. Characteristics & Applications: • Adds a pronounced malty flavor without adding non-fermentables or affecting foam. • Small amounts added to the grist will improve the malty flavor and give a richer color to low gravity brews. • Produced from AMBA/BMBRI recommended 6-Row Malting Barley varieties.

  • 1 lbs 2-Row Caramel Malt 40L; Briess

    2-Row Caramel Malt 40L; Briess

Sweet, Caramel, Toffee. S Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 40L is a roasted caramel malt that imparts golden to light red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Brewed 7/6/12

Missed my og of 1.064 and hit 1.060. Mashed at 151 F. Fermented at 66F. Pitched 150 ml slurry WLP007 in each carboy. Slow start. Fermentation slowed, 7/10, dry hopped with 2oz whole cascade and 1oz pellet simcoe in each carboy. Added another 2oz Cascade 7/13 to each. Kegged 7/16/12 at FG 1.014. Lots of tropical fruit. Probably the last time I use homegrown Cascade, as I always get this mango type flavor out of them. Didn't like the flavor of my homegrown hops and couldnt drink this. Way too tropical fruit. After 2 1/2 months, however, these flavors had subsided and the beer is pretty good. Color and malt profile are nice. Bitterness is apparant. Simcoe is now more apparent than the tropical fruit homegrown Cascades, so it tastes much better. Head is awesome, rocky, tiny bubbles. Good lacing.
