Wyeast 1099 Whitbread Ale™
Wyeast 1099 Whitbread Ale™
A mildly malty and slightly fruity fermentation profile; not as tart and dry as 1098 and much more flocculant. Clears well without filtration.
Notes
Honey added to the boil at the same time as the malt extract. Shouldn't give too much honey flavor, and really serves more to add gravity points and dry it out a bit.

Turned out almost exactly how I wanted it. Ended up just a touch too sweet, but good light color, good honey flavor, wonderfully smooth. I will put the honey malt down to 6 oz. or 5 oz. if I re-make it. Try it out if you'd like an easy, enjoyable sweet summer ale!
