Ingredients (All Grain6 gal)

  • 3 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 4 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • 3 lbs Euro Pils; Crisp

    Euro Pils; Crisp

  • 3/4 lbs Acidulated Malt

    Acidulated Malt

    High lactic acid. For lambics, sour mash beers, Irish stout, pilsners and wheats.

  • 1.6 oz Tettnanger - 3.2 AA% pellets; boiled 60 min

    Mild, slightly spicy. 'Noble'.

  • 1 g Grains of Paradise - (omitted from calculations)

    Grains of Paradise

    Pungent peppery flavor.

  • 1 g Corriander crushed - (omitted from calculations)

    Coriander is the seed of Coriandrum sativum, a plant in the parsley family. The seed is ground or crushed. Coriander has a mild, distinctive taste similar to a blend of lemon and sage.

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Mashed at 149ºF for 60 minutes. Lost 1ºF in 1 hour. Used 3 dried orange peels in boil for last 3 minutes. Spices were added at flameout. Used 5.2pH mash stabilizer.
