This is my best guess at a copy of the Brooklyn Brewery Brooklyn Black Chocolate Stout. They're kind enough to post a great deal of info about their brews on their website, so I'm trying some reverse engineering. >> Upon further reflection, I've decided that 19.5 pounds of grain is just a *teensy* bit on the CRAZY side for a 5 gallon batch, so I'm going to have to completely revise this recipe. <<

Ingredients (All Grain5 gal)

  • 11 lbs English 2-row Lager

    English 2-row Lager

  • 4 lbs Belgian Wheat Malt

    Belgian Wheat Malt

    Malted wheat for use in Wheat beers.

  • 2 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 1 lbs Black Roasted Barley

    Black Roasted Barley

    Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

  • 1 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • .5 lbs American Black Patent

    American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • 3 oz Cascade - 5.5 AA% whole; boiled 60 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 2 oz Willamette - 5.0 AA% whole; boiled 30 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • 2 oz East Kent Goldings - 5.0 AA% whole; boiled 1 min

    East Kent Goldings

    Mild, slightly flowery.

  • Wyeast 1318 London Ale III™

    Wyeast 1318 London Ale III™

    From traditional London brewery with great malt and hop profile. True top cropping strain, fruity, very light, soft balanced palate, finishes slightly sweet.
