Very pleased how this came out. A nice bready malt aroma with notes of chocolate. Medium body and a pleasant mild hop bitterness, and a good malty character, more dry than sweet.

  • 4.5 lbs German Vienna

    Provides body. For Oktoberfest, bock, porter, stout, red, amber and brown ales.

  • 0.5 lbs Weyermann Carafa® III; Weyermann

    Weyermann Carafa® III; Weyermann

    Carafa I, II and III also are available de-husked. Adds aroma, color and body.

  • 1 oz Perle - 7.8 AA% pellets; boiled 60 min

    White Labs WLP838 Southern German Lager

    This yeast is characterized by a malty finish and balanced aroma. It is a strong fermentor, produces slight sulfur, and low diacetyl.

Notes

Infusion mash at 152-F for 60 minutes. Mashout(optional) at 170, fly sparge for 45-60 minutes and collect 6.2-6.5 gallons of wort. Boil for 60 minutes, follow hop schedule, chill quickly to under 80-F, pitch yeast, and follow fermentation schedule: 12 days primary 55-F, bucket or glass. 4 weeks, bucket or glass in cold secondary, 50-F. Conditioning for 2 weeks, bottles or keg. Happy Brewing!
