Ingredients (All Grain6 gal)

  • 13 lbs Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • .75 lbs Belgian Aromatic

    Belgian Aromatic

Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • .6 lbs Belgian Caramunich

    Belgian Caramunich

Caramel, full flavor, copper color. For Belgian ales, German smoked and bocks.

  • 1.5 lbs Light Brown Sugar

    Light Brown Sugar

Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 1 oz Northern Brewer - 8.0 AA% pellets; boiled 45 min

    Northern Brewer

Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1 oz Hallertauer Hersbrucker - 4.5 AA% whole; boiled 10 min

    Hallertauer Hersbrucker

    Mild to strong. 'Noble'.

  • White Labs WLP566 Belgian Saison II

White Labs WLP566 Belgian Saison II

Saison strain with more fruity ester production than with WLP565. Moderately phenolic, with a clove-like characteristic in finished beer flavor and aroma. Ferments faster than WLP565.
