I honestly didn't know what category to put this in. Most of the credit for this has to go to Charles Papazian as it's basically his Rocky's Raccoon lager recipe converted to grain. I used a single infusion mash at 154 degrees for 60 minutes. I used steam beer yeast because I didn't have a refrigerator for lagering at the time. I'd made this several times in the past using extracts instead of grain. The beer had a much cleaner flavor when made from grain. I think the yeast helped, too. The fermentation temperature was between 60-65. That's where my basement stays during the winter and was the reason for the yeast choice. I'm guessing this would turn out almost as well with a clean ale yeast.
