Sweet, Pronounced Caramel. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 60L is a roasted caramel malt that imparts deep golden to red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to amber and red beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Citra®
Citra™ is a special aroma hop variety developed by the Hop Breeding Company (a joint venture between John I. Haas, Inc. and Select Botanicals Group, LLC). It was released in 2007. Citra™ has fairly high alpha acids and total oil contents with a low percentage of cohumulone content. The variety imparts interesting citrus and tropical fruit characters to beer.

White Labs WLP041 Pacific Ale
A popular ale yeast from the Pacific Northwest. The yeast will clear from the beer well, and leave a malty profile. More fruity than WLP002, English Ale Yeast. Good yeast for English style ales including milds, bitters, IPA, porters, and English style stouts.

Dry hopped with 2 oz Centennial (1 pellet @ 8.1% AA, 1 whole leaf @ 10.3 AA), 1 oz Columbus (whole leaf @ 13% AA); 1 oz Chinook (pellet @ 11.8% AA). Dry hopped in corny, using mesh bag

This took forever to get rolling, even with a yeast starter, but apparently that's common with the Pacific Ale yeast. Took me a LONG time (4 months) to move from primary to keg, so I thought it would be terribly affected by the sitting on the trub for so long. Seems to be fine. I kegged it last night, and was already drinking it by the afternoon today. Will be making this again.
