3.0/5.0 1 rating

Ingredients (All Grain10 gal)

  • 18 lbs American 2-row

    American 2-row

Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs 2-Row Caramel Malt 80L; Briess

    2-Row Caramel Malt 80L; Briess

Pronounced Caramel, Slight Burnt Sugar, Raisiny, Prune. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam, foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 80L is a roasted caramel malt that imparts red to deep red color. • Use 3-15% in Amber and Red beers. • Use 10-15% in Bock beers. • Use 7-15% in Dark beers. • Use 10-15% in Porter and Stout. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

  • 1 lbs Honey Malt

    Honey Malt

Nutty honey flavor. For brown ales, Belgian wheats, bocks and many other styles.

  • 3 oz Glacier - 5.1 AA% whole; boiled 90 min

    Glacier

An excellent new variety with balanced bittering properties combined with a good aroma profile.

  • 1 oz Glacier - 5.1 AA% whole; boiled 10 min

    Glacier

An excellent new variety with balanced bittering properties combined with a good aroma profile.

  • Wyeast 2278 Czech Pils™

    Wyeast 2278 Czech Pils™

Classic pilsner strain from the home of pilsners for a dry, but malty finish. The perfect choice for pilsners and bock beers. Sulfur produced during fermentation dissipates with conditioning.

Notes

Brewed to California Common standards, but the brew store didn't have 2112 so I will be split batching into a lager (Czech 2278) and american ale II (1272). Also first use of Glacier hops.

American Ale better than Czech Pils Lager

2012-02-03 7:55pm

Initial taste tests are in. American Alle II beats Czech Pils. The fruitiness adds a diferent flavor that adds to the complexity. Both are great beers Needs more malt falvor and also some more hop but both are true to style. Needs more hop and some in the flavor stage

Glacier Hops

2012-02-05 12:36pm

Just started drinking a pale ale I made with 3oz of whole Glacier hops at flameout; then I let them sit in the hot wort for 30 minutes before cooling. Glacier has one of those flavor/aromas that remind me of a "Mountain Rain" fragrance or some other description of high altitude freshness you see in the stores. Some people compare it to Willamette, but I find Willamette to be pretty boring. Glacier's got something special to it. It does take a healthy bit of those hops to make your beer what I'd call "hoppy" though. In the case of my pale ale, 3oz. may have been a little too much but I won't suffer. For my own Common recipe, I use Sterling hops. But I've also mixed Sterling with Glacier in other recipes and have been happy. That combo may be worth a try in a Common beer as an alternative to Northern Brewer hops.

Czech - Was not as good as American 2 Yeast

2012-03-09 7:24pm

Second keg with Czech is almost done. In the beginnning it just wasn't that good. Boring in fact. Liked the fruitiness of the AA2 yeast better. It went through a stage that tasted grassy but now that it has aged in the refride it gets better with every glass. Would have been much better with 2112 (Cal Common).
