Deep red color with a distinctive earthy flavor. Characteristics & Applications: • Because of its pronounced rye flavor, we using in 5% increments until desired flavor is achieved. • Rye Malt is fully modified. It performs well in a single temperature infusion mash if used at less than 20% of total grist. Over 20% a slow lautering time may be experience. Add rice hulls when using more than 20%.

The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam, foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 80L is a roasted caramel malt that imparts red to deep red color. • Use 3-15% in Amber and Red beers. • Use 10-15% in Bock beers. • Use 7-15% in Dark beers. • Use 10-15% in Porter and Stout. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Currently Bottle Conditioning

I made this about three or four weeks ago. I have it bottle conditioning currently and plan on tasting it on New Years. It smelled great at bottling though! I will update once I do an official taste test. Primed with 4 oz of priming sugar. Original gravity ended up being 1.050 and terminal gravity was 1.008.

I have now been able to do proper sampling by drinking several 22 oz bombers of this beer since I brewed it. The rye flavor is not overpowering, but blends well with the citrus hop notes. Medium to light body with smooth mouth feel. Little to no head or lacing. Any flavor from the carraway seeds did not seem to come through.
