Start to soak oak chips in Admiral Nelson Spiced Rum on brew day and let soak until ready to rack to secondary. Add oak chips to secondary vessel and rack beer directly onto the oak chips (DO NOT ADD THE RUM) I chose Admiral Nelson because it is a milder spiced rum than Captain Morgan and has more vanilla notes in the finish.
