  • 8.75 lbs German Wheat Malt Light

  • 4.6 lbs German 2-row Pils

  • 0.33 lbs Chocolate Wheat Malt

    Chocolate Wheat Malt

    Intensifies aroma; improves color. For dark ales, alt, dark wheat, stout and porter.

  • 1.5 lbs Belgian Caramunich

    Belgian Caramunich

    Caramel, full flavor, copper color. For Belgian ales, German smoked and bocks.

  • .75 oz Hallertauer Hersbrucker - 4.3 AA% pellets; boiled 60 min

    Hallertauer Hersbrucker

    Mild to strong. 'Noble'.

  • Wyeast 3068 Weihenstephan Weizen™

    Wyeast 3068 Weihenstephan Weizen™

    Unique top-fermenting yeast which produces the unique and spicy weizen character, rich with clove, vanilla and banana. Best results are achieved when fermentations are held around 68F.

Notes

Double Decoction Match 1) Mash in cold water 1.7qts per pound 2) Raise to 95F. Pull 1/3 of grain mash at 140 for 20 minutes then and boil for 45 minutes 3) Add Back to main mash raise temperature to 131F and repeat decantation 5) Raise temp to 166 and hold for a few minutes before lautering Boil for 60 minutes Initial Gravity was 1.084 Ferment at 60F Condition in secondary at 42F for 3 to 4 weeks Bottle with 1.25 cup corn sugar for priming. Condition in the bottle as long as desired (30 to 60 days).

Avery Homebrewer night

I took this beer along with 2 others to Avery's home brewer night. Several people there including Avery employees and Upslope employees said it was the best and most interesting home brew brought in that night.
