An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

Notes
About 3-4 days before you plan to keg or bottle, rack to a secondary and add 3 dried chipotle peppers. Taste each day until it reaches your desired level of heat/smokiness from the peppers then package. I've brewed this twice - the first time it was on the peppers for 3 days, the second time for 4, which I liked better. The pepper flavor and smokiness was more assertive but the heat was not overpowering. Or...Jalepeno and Hobanero peppers to taste. For ten gallons, I use six jalepeno and two hobanero. I add the peppers when I secondary/ keg the beer.
