This recipe aims for a reddish amber ale, full-bodied and flavorful but not too heavy, with ABV just under 4.4% The "official" name for it is "Alan's Own Aw-Shucks! Amber Ale", and it will be our Christmas ale this year.

Ingredients (Extract10 gal)

  • 1 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • 1 3/16 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 5 5/16 lbs Pale Liquid; Alexanders

    Pale Liquid; Alexanders

    Reportedly lightest colored malt extract available.

  • 5 3/16 lbs Liquid Amber Extract

    Liquid Amber Extract

    Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 1/2 oz East Kent Goldings - 5.0 AA% pellets; boiled 60 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1/2 oz Liberty - 4.0 AA% pellets; boiled 15 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • 1/2 oz Eroica - 12.0 AA% pellets; boiled 1 min

    Eroica

    Mainly used for bittering and good aroma for pale ales and dark ales, and also stouts. The aroma is quite strong but not unpleasant.

    Ideally suited for Scottish-style ales, and high gravity ales of all types.
