Danstar Nottingham
Danstar Nottingham
The Nottingham strain was selected for its highly flocculant & relatively full attenuation properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop. The recommended fermentation temperature range of this strain is 14° to 21°C (57° to 70°F) with good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer. With a relatively high alcohol tolerance, Nottingham is a great choice for creation of higher-alcohol specialty beers!
Notes
This is a Northern Brewer all-grain recipe kit. Single infusion mash with 4.25 gal of water at target temp of 152 degrees F. for 60 minutes. Actual temp was 153-154. Sparge with 4.25 gal of 170 degree water until 6-6.5 gal of wort collected. Boil 60 minutes and follow hop schedule. Chill quickly to under 80 degrees, transfer to primary-bucket or glass- and ferment for 12 days at 65-70 degrees F. Secondary optional, transfer to bottling bucket or keg and condition 2-4 weeks. Target OG is 1.064, I ended up with much higher efficiency with a 1.072 OG. Final gravity should determine amount of fermentable sugars. Cheers!
