Specialty Beer • All Grain • 13 gal

Ernie Hahn,This is basically a dark IPA for the holidays. It's currently in the fermentor and I'll let you know how the finished product is.

Ingredients (All Grain13 gal)

  • 23.95 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 2.56 lbs German Light Munich

    German Light Munich

    For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

  • .81 lbs Crystal Malt 80°L

    Crystal Malt 80°L

    Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

  • .54 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • .81 lbs American Black Patent

    American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • 2 oz Centennial - 10.7 AA% whole; boiled 60 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • .5 oz Columbus - 15.7 AA% whole; boiled 60 min

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • .5 oz Centennial - 10.7 AA% whole; boiled 30 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 oz Cascade - 9.6 AA% whole; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • .5 oz Centennial - 10.7 AA% whole; boiled 15 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • Wyeast 3766 Cider

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Notes

Also in hops:.5 oz. of Columbus for 15 minutes; 1 oz. of Cascades for 5 minutes; 1 oz. of Columbus at end of boil; and dry hopping different kegs with Centenial and/or Cascades.
