Trying to fix a Wet Hopped IPA that didn't bitter enough. Had a friend give me about a pound of wet cascade hops he harvested so I decided to make a 60 minute wet ipa.

Ingredients (Partial Mash5 gal)

  • 13.3 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .1 lbs Extra Pale; Morgans

    Extra Pale; Morgans

    For making very pale ales and lagers.

  • .5 lbs Barley Flaked

    Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • 3 oz Cascade - 0.5 AA% whole; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 tsp Irish Moss - 10 Minutes (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

Notes

Actual Yeast WLP090 San Diego Super Yeast A friend harvested me a pound of Cascade wet hops. I plugged in the bitterness at 1/5 of that of dry hops, it looked like I needed to use the whole pound. 7 days moved to secondary with dry hops. Gravity 1.014 Taste and aroma was of honey but no bitterness. Decided to boil some warrior hop pellets for 60 minutes in 2 cups of water with 2/3 cup dma and add it to secondary. Pulling out the Cascade dry hops and putting in 1 ounce centennial pellet hops After 7 days in secondary, bottled with 5 oz of corn sugar. Final Gravity 1.012

Bitterness Fix

After 3 days in secondary I decided to boil some warrior hop pellets for 60 minutes in 2 cups of water with 2/3 cup dma and add it to secondary. Pulling out the Cascade dry hops and putting in 1 ounce centennial pellet hops. Keeping my fingers crossed

Wow that is alot of hops...i dont think dry hopping tends to give any bitterness at all if it does its very little. More for flavor and aroma than anything else.

The hops were wet hops which have a 1/5 ratio of strength to Dry hops. When I bottled it I tasted again and adding the boiled Warrior hops fixed the bitterness issue and the Centennial dry hops gave it a nice citrus aroma. Seems like the wet hops will mostly contribute to flavor. May have better tasting notes after carbonation if you are interested.
