  • 3.5 kg Maris Otter; Crisp

    Maris Otter; Crisp

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 2 kg BEST Wheat Malt Light; Best Malz

    BEST Wheat Malt Light; Best Malz

    BEST Wheat Malt light emphasises the effervescent freshness and the typical top-fermented taste of wheat beer. It is produced from high quality brewing wheat. Malting processes adapted to the raw material highlight the particular qualities of this malt.

  • 1.5 kg BEST Caramel Malt Light; Best Malz

    BEST Caramel Malt Light; Best Malz

    BEST Caramel Malt light reinforces the typical “caramely” malt aroma of the beer. It gives the beer a darker colour and increases froth stability. In addition it strengthens the full-bodied character of the beer. The malt is malted, sugared and finally gently roasted using a special process. This produces the special caramel aroma. As with all BEST caramel malts, this malt excels because it has exceptional processing properties and excellent taste qualities.

    Roast Barley; Crisp

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 0.1 kg Dark Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 40 g Fuggle - 5.5 AA% pellets; boiled 60 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 30 g Saaz - 3.4 AA% pellets; boiled 60 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 20 g Fuggle - 5.5 AA% pellets; boiled 30 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 20 g Corriander seeds - boiled 60 minutes (omitted from calculations)

    Corriander seeds

    Coriander is the seed of Coriandrum sativum, a plant in the parsley family. The seed is globular and almost round, brown to yellow red, and 1/5 inch in diameter with alternating straight and wavy ridges. Coriander has a mild, distinctive taste similar to a blend of lemon and sage.

    Danstar Windsor

    Windsor ale yeast is a true English strain that produces a beer which is estery to both palate and nose with a slight fresh yeasty flavor. Beers created with Windsor are usually described as full-bodied, fruity English ales. Brewers choose Windsor to produce beers that range from pale ale to porter with moderate alcohol levels and the flavor & aroma characteristics of the best traditional ales. Depending on the composition of the recipe, Windsor demonstrates moderate attenuation which will leave a relatively high gravity (density). Recommended fermentation temperature range for Windsor is 17° to 21°C (64° to 70°F).

Notes

experimental brew. the goal is a light brown ale with big body, good head retention, hops aroma and malty/grainy taste. the sugar is caramelized with about 0.3 liters of the pre boiled wort and then added to the boil. 10 grams of the 30 grams saaz are actually boiled for 30 minutes. brewed on 3 September 2011. bottled on 17 September 2011.

Huge success

Huge success. The beer turned out very drinkable. Biter sweet, with pronounced malty flavor and nice hop aroma. We can not stop drinking it.
