Hawkeye

into the primary

August 7: Pitched a vial of WL001 into a darker-than-expected 5-gallon batch at about 74F with an O.G. of 1.061 - slightly rich.

Into the 2ndary -

Racked this one to the secondary on day 8 with an SG of 1.014, then dry-hopped with 2 full ounces of Centennial pellets. Lovely aroma! Darker than expected - I should have used half-and-half Crystal 20 with the Crystal 40.

Surprisingly clean after only a month in the bottle

I am not an IPA drinker, but this one seems to work well. It is still young and a bit harsh, despite a nice frothy head, with a strong centennial aroma up front. The bitterness really comes through after swallowing -- and it is sincerely bitter - more like an Imperial-level of bitter. I would like a few IPA fans of mine to give it a try, and have it sit for a few more weeks before making final judgements.
