    Classic farmhouse ale yeast. Spicy and complex aromatics including bubble gum. Very tart and dry on palate with mild fruit. Finishes crisp and mildly acidic.

Notes

+ Mash @ 149F to keep it dry. + Aerate like hell & pitch @ 70F. Maintain minimal temp control using swamp cooler. + After visible fermentation activity completes, remove from swamp cooler for 3 day diacetyl rest. + Cold crash for 2 weeks + Bottle w/ priming sugar and store @ 76F degrees for 8 weeks.
