White Labs WLP320 American Hefeweizen Ale
White Labs WLP320 American Hefeweizen Ale
This yeast is used to produce the Oregon style American Hefeweizen. Unlike WLP300, this yeast produces a very slight amount of the banana and clove notes. It produces some sulfur, but is otherwise a clean fermenting yeast, which does not flocculate well,

I forgot to account for the sugar from the grapefruit, so the gravity hit 1.082. So, because this turned out with such a high gravity, I let it age a bit, and it mellowed out nicely. You got some grapefruit backflavor, but it had a nice body, and still tasted light. sort of like a "light" belgian beer if there is such a thing. Definitely brewing this again. Will also add zest next time.
