  • 20 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 2 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 3 lbs American Munich

    American Munich

    Munich Dunkels. Adds color/nutty flavor. Sometimes called Aromatic.

  • 2 lbs White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • 1 lbs Dry Light Extract

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Mash all grains for 90 minutes at 153F. Try to use a fairly wet mash. If you use rice hulls in the mash, it will help with sparging. Sparge with 170F water. I had to use a 2 hour boil to get the ending gravity I wanted -- shoot for 1.075 to 1.080. Technically, this is a light barlewine. Add the DME to the boil when only about 15-30 minutes remain, otherwise the sugars will carmalize too much and the color will be too dark. If you have a large enough mash tun, avoid using DME by increasing the base malt (pale malt). I add hops to the keg for dry hopping.
