Wyeast 2565 Kolsch
Wyeast 2565 Kolsch
A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.
Notes
This is an immensely malty beer. I recommend using two fermenters, EVEN if you use a blowoff tube. The kraeusen of this beer is enormous. Definitely use a starter. Style purists will probably turn up their nose to the late kettle additions and perhaps the relativly large amount of wheat malt used. I think they add an interesting depth to a great beer. I gave this guy two weeks in primary. One month in the secondary. After two more months in the bottle this puppy is very tasty. It is fantasticly malty with a little hoppiness. Next time I will use a larger proportion of wheat malt, and upset the style purists with just a little more hops. I plan to use a wide variety of noble hops next time.

the WLP 920 is a seasonal offering. The WLP 820 is a year around affair. The advertised attenuation is pretty much the same, high sixties to lower seventies. I used the 920.
